Instructions

1. Prepare the Mixture:
In a large mixing bowl, combine the chopped pecans, graham cracker crumbs, powdered sugar, corn syrup, vanilla extract, and salt. Stir until all ingredients are well combined and the mixture holds together when pressed.

2. Shape the Balls:
Using a small cookie scoop or your hands, roll the mixture into bite-sized balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.

3. Chill:
Refrigerate the balls for about 30 minutes to firm up before coating them in chocolate.

4. Melt the Chocolate:
In a microwave-safe bowl, melt the chocolate chips with the coconut oil (if using) in 30-second intervals, stirring between each, until smooth.

5. Coat the Balls:
Dip each pecan pie ball into the melted chocolate, ensuring it’s fully coated. Use a fork to lift the ball out of the chocolate, letting the excess drip off, and place it back on the parchment-lined sheet.

6. Set the Coating:
Allow the chocolate to set at room temperature or refrigerate for faster results.
