Directions
Step 1: Bake the Pie Crust
- Preheat your oven to 375°F (190°C).
- Roll out your pie crust into a 9-inch pie dish. Prick the bottom with a fork to prevent puffing.
- Line the crust with parchment paper and fill it with pie weights or dried beans.
- Bake for 15 minutes, then remove the parchment and weights. Bake for another 5-7 minutes until the crust is golden brown. Let it cool completely.
Step 2: Prepare the Coconut Custard Filling
- In a medium saucepan, whisk together sugar, cornstarch, and salt.
- Gradually add the milk, whisking constantly to avoid lumps.
- Cook over medium heat, stirring continuously, until the mixture begins to thicken.
- Once thickened, reduce the heat to low. Slowly temper the egg yolks by whisking in a small amount of the hot mixture, then gradually add the yolks back into the pan.
- Cook for another 2-3 minutes, stirring constantly, until the custard is thick and smooth.
- Remove from heat and stir in the shredded coconut, vanilla extract, and butter. Mix until the butter is fully melted and incorporated.
Step 3: Assemble the Pie
- Pour the warm coconut custard filling into the cooled pie crust. Spread it out evenly.
- Cover the surface with plastic wrap to prevent a skin from forming and refrigerate for at least 4 hours, or until fully set.
Step 4: Make the Whipped Topping
- In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread or pipe the whipped cream over the chilled pie.
Step 5: Garnish and Serve
- Sprinkle toasted shredded coconut on top of the whipped cream for added flavor and texture.
- Slice and serve chilled.
Tips for the Best Coconut Cream Pie
- Use Full-Fat Milk: For the creamiest custard, whole milk is essential.
- Toast the Coconut: Toasting the shredded coconut adds a nutty, caramelized flavor to the garnish. Simply spread the coconut on a baking sheet and toast it in a 350°F (175°C) oven for 5-7 minutes, stirring occasionally.
- Chill Thoroughly: Allow the pie to set completely in the refrigerator before serving to ensure clean slices.
- Make It Ahead: This pie can be prepared a day in advance, making it ideal for special occasions.
