Directions
Step 1: Prepare Your Ingredients
- Line a baking sheet or countertop with parchment paper or wax paper.
- Measure and have all your ingredients ready, as the candy mixture needs to be worked quickly once cooked.
Step 2: Make the Candy Base
- In a medium saucepan, combine the sugar, milk, and butter.
- Cook over medium heat, stirring constantly, until the sugar dissolves and the butter melts.
- Once the mixture begins to boil, stop stirring and allow it to boil for 5 minutes, or until it reaches the soft-ball stage (about 235°F or 112°C on a candy thermometer).
Step 3: Add the Nuts and Flavoring
- Remove the saucepan from heat and stir in the vanilla extract, chopped nuts, and shredded coconut (if using). Mix quickly but thoroughly.
Step 4: Shape the Candy
- Working quickly, drop spoonfuls of the mixture onto the prepared parchment or wax paper. The candy will firm up as it cools.
- Allow the candy to cool completely before serving, about 30 minutes.
Tips for Perfect Oklahoma Nut Candy
- Use Fresh Nuts: Fresh pecans or walnuts make all the difference in flavor and texture.
- Work Quickly: Once you add the nuts and vanilla, the mixture begins to harden fast, so move swiftly to spoon it out.
- Customize It: Feel free to add dried fruits like chopped cherries or raisins for a festive twist.
- Store Properly: Keep the candy in an airtight container at room temperature for up to a week or in the fridge for longer storage.
