Instructions:

  1. Prepare the Peanut Butter Mixture:
    • In a large mixing bowl, combine the peanut butter and softened butter. Beat until smooth and well combined.
    • Add the powdered sugar and vanilla extract to the bowl. Mix until the ingredients come together to form a thick, dough-like consistency.
  2. Shape the Balls:
    • Scoop out about a tablespoon of the peanut butter mixture and roll it into a ball. Repeat until all the mixture is used. Place the balls on a baking sheet lined with parchment paper.
    • Chill the peanut butter balls in the refrigerator for about 30 minutes, or until firm.
  3. Melt the Chocolate:
    • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each, until smooth. For a shinier coating, stir in the coconut oil.
  4. Dip the Peanut Butter Balls:
    • Using a fork or a toothpick, dip each chilled peanut butter ball into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off before placing the ball back onto the parchment-lined baking sheet.
  5. Set the Chocolate:
    • Once all the balls are coated in chocolate, return them to the refrigerator for 20-30 minutes, or until the chocolate has hardened.
  6. Serve and Enjoy:
    • Transfer the finished peanut butter balls to a serving dish or store them in an airtight container in the refrigerator. They can also be frozen for longer storage.
