Step 1: Prepare the Chicken
- Season the chicken breasts with salt, pepper, and half of the ranch seasoning mix.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set it aside.
Step 2: Make the Creamy Sauce
- In the same skillet, pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan.
- Reduce the heat to low and stir in the cream cheese, heavy cream, garlic powder, onion powder, and the remaining ranch seasoning mix. Whisk until the cream cheese is fully melted and the sauce is smooth.
- Add the shredded cheddar cheese to the sauce and stir until melted and well incorporated.
Step 3: Combine and Simmer
- Return the chicken breasts to the skillet, nestling them into the creamy sauce.
- Cover the skillet with a lid and let the chicken simmer on low heat for 15-20 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
Step 4: Serve
- Once the chicken is cooked, spoon the creamy ranch sauce over the top.
- Garnish with fresh parsley if desired.
