Instructions:

Step 1: Prepare Your Ingredients

  1. Make sure your rice is cold and separated to avoid clumping during cooking.
  2. Chop the bacon into bite-sized pieces and mince the garlic.

Step 2: Cook the Bacon

  1. Heat a large skillet or wok over medium heat.
  2. Add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set it aside, leaving the rendered bacon fat in the skillet.

Step 3: Scramble the Eggs

  1. Push the bacon fat to one side of the skillet and pour in the beaten eggs.
  2. Scramble the eggs until just cooked, then mix them with the bacon fat. Remove the eggs and set aside.

Step 4: Sauté the Vegetables

  1. Add the minced garlic to the skillet and sauté until fragrant, about 30 seconds.
  2. Stir in the peas and carrots, cooking for 2-3 minutes until heated through.

Step 5: Combine Everything

  1. Increase the heat to medium-high and add the cold rice to the skillet.
  2. Stir-fry the rice for 2-3 minutes, breaking up any clumps.
  3. Add the soy sauce, oyster sauce (if using), and sesame oil. Mix until the rice is evenly coated.

  1. Remove the skillet from heat and transfer the bacon fried rice to serving bowls.
