Instructions:
Step 1: Prepare Your Ingredients
- Make sure your rice is cold and separated to avoid clumping during cooking.
- Chop the bacon into bite-sized pieces and mince the garlic.
Step 2: Cook the Bacon
- Heat a large skillet or wok over medium heat.
- Add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set it aside, leaving the rendered bacon fat in the skillet.
Step 3: Scramble the Eggs
- Push the bacon fat to one side of the skillet and pour in the beaten eggs.
- Scramble the eggs until just cooked, then mix them with the bacon fat. Remove the eggs and set aside.
Step 4: Sauté the Vegetables
- Add the minced garlic to the skillet and sauté until fragrant, about 30 seconds.
- Stir in the peas and carrots, cooking for 2-3 minutes until heated through.
Step 5: Combine Everything
- Increase the heat to medium-high and add the cold rice to the skillet.
- Stir-fry the rice for 2-3 minutes, breaking up any clumps.
- Add the soy sauce, oyster sauce (if using), and sesame oil. Mix until the rice is evenly coated.
- Return the cooked bacon and scrambled eggs to the skillet and mix thoroughly.
- Toss in the chopped green onions and stir for another minute.
Step 6: Serve and Garnish
- Remove the skillet from heat and transfer the bacon fried rice to serving bowls.
- Garnish with additional green onions or sesame seeds if desired.
- Serve immediately and enjoy!
