Instructions

1. Prepare the filling:

  • In a medium saucepan over medium heat, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice.
  • Cook for 5-7 minutes, stirring occasionally, until the apples soften slightly.
  • Stir in the cornstarch slurry and cook for another 1-2 minutes, until the mixture thickens.
  • Remove from heat and let the filling cool completely.

2. Assemble the egg rolls:

  • Lay an egg roll wrapper on a clean surface in a diamond shape.
  • Spoon 2-3 tablespoons of the apple filling onto the center of the wrapper.
  • Fold the bottom corner over the filling, then fold in the sides. Roll tightly towards the top corner, sealing the edge with a brush of beaten egg.
  • Repeat with the remaining wrappers and filling.

3. Fry the egg rolls:
