Instructions
Step 1: Roast the Cauliflower
- Preheat your oven to 425°F (220°C).
- Spread the cauliflower florets on a baking sheet lined with parchment paper. Add the chopped onion and garlic cloves.
- Drizzle with olive oil, then sprinkle with smoked paprika, cumin, salt, and pepper. Toss to coat evenly.
- Roast in the preheated oven for 25–30 minutes, or until the cauliflower is golden brown and tender. Stir halfway through for even roasting.
Step 2: Blend the Soup Base
- Once the cauliflower is roasted, transfer it to a large pot. Reserve a few roasted florets for garnish if desired.
- Add the vegetable broth to the pot and bring it to a simmer over medium heat. Cook for 5 minutes to let the flavors meld.
- Using an immersion blender, blend the soup until smooth and creamy. Alternatively, carefully transfer the mixture in batches to a countertop blender.
Step 3: Add Creaminess
- Return the blended soup to the pot (if using a countertop blender).
- Stir in the heavy cream (or coconut milk) and butter. Simmer for another 5 minutes, stirring occasionally.
- Taste and adjust seasoning with additional salt and pepper if needed.
Step 4: Serve and Garnish
- Ladle the hot soup into bowls.
- Garnish with chopped parsley or chives, a drizzle of olive oil or cream, and any additional toppings like croutons, nuts, or seeds.
Cooking Tips
- Customize the Texture: For a chunkier soup, blend only half of the roasted cauliflower and leave the rest as is.
- Add Depth: Toss in a splash of white wine or a squeeze of lemon juice for extra brightness.
- Spice It Up: Add a pinch of chili flakes or cayenne pepper for a kick of heat.
- Bulk It Up: For a heartier meal, stir in cooked lentils, chickpeas, or quinoa before serving.
- Storage: Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.
