Instructions:

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish with nonstick spray or a thin layer of butter.

Step 2: Prepare the Potatoes

Place the diced potatoes in a large mixing bowl. Drizzle with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper. Toss well to ensure the potatoes are evenly coated with the seasonings.

Step 3: Layer the Casserole

Spread half of the seasoned potatoes evenly in the prepared baking dish. Add half of the cubed chicken on top. Sprinkle half of the cheddar and mozzarella cheese over the chicken. Repeat the layering process with the remaining potatoes, chicken, and cheese.

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and continue baking for an additional 25-30 minutes, or until the potatoes are fork-tender and the cheese is bubbly and golden.
